Homebrewing - Start All Grain Brewing - Part 1

Let's start with the basics of affordable All Grain Brewing. First what you won't need. You won't need to take out a second mortgage on the family home to start. Despite what you may have shopped around for and been shocked at the cost of. All Grain brewing can be affordable and easy.
This is the method that I call Pragmatic Brewing. That is right folks, Today I'm going to walk you through a bit of what its about. Lets see what we will need to have to have to start. Weather your starting from being an Extract brewer or this is your very first beer. One question the Extract brewer will need is: Is my current brew kettle big enough? Answer: Probably not. For a 5 gallon batch of All Grain beer you will need to be able to boil at least 7 gallons all at once.
The All Grain brewer has to boil all of his liquid at once. Which means you will need a much bigger kettle, I would suggest no smaller than a 50QT kettle. There has been a lot of talk about do I need a Stainless Steel kettle? No it dos not have to be Stainless Steel, It can be a heavy gauge Aluminum kettle. You can pick up an Aluminum for a fraction of the cost, Around .00 lid and all. Opposed to an SS kettle which can run around 0.00.
There are some other items that you will need different probably than what you have.
You'll also need a Mash Tun, A way to get the sweet wort extracted from the grains.

The main concept we're going to be working with is that for the best
efficiency, the runoff volumes from your mash and batch sparge should be equal. In order to do that, it's sometimes necessary to infuse your mash with extra water before the first runoff. Here's how it works...
R1=initial runoff volume which = mash water volume - water absorbed by grain
(assumed to be .1 gal./lb. for this example since that's the way my system works...use your own figure)
S= batch sparge water volume
V= total boil volume (amount in needed in kettle for boil)
I=volume of infusions for a step mash
R1+I+S(1)+S(2)+S(etc.) must equal V
AND
R1+I=.5V
Let's see how this works in a brewing session. Assume a recipe with 10 lb. of grain, and that you need to collect 7 gal. of pre boil wort. A mash ration of 1.25 qt./lb. would require 12.5 qt. or 3.125 gal. of strike water. Based on an absorption of .1 gal./lb., the mash would absorb 1 gal. of water so we'd get 2.125 gal. of water from the mash. Since we want to collect 3.5 gal. (or 50% of the boil volume), after the mash is complete we'd add 1.375 gal. (5.5 qt.) of water to mash tun before the first runoff. Stir the additional water in, let it sit for a few minutes, then vorlauf until clear and start your runoff. After the runoff, we add 3.5 gal. of batch sparge water. Stir it in, rest
10-15 minutes, stir again, then vorlauf and runoff as before. These two runoffs will give us our pre boil volume of 7 gal. of sweet wort.
Now, let's take a look at how to build the equipment and do a brew session!
For the mashtun, you'll need a cooler. I prefer the rectangular ones. The large top opening makes it easier to stir the mash than a round cooler does. Since grain bed depth makes practically no difference in batch sparging, one of the main reasons people use the round coolers is nullified. The rectangular ones are also cheaper. You'll also need a rubber bung for a minikeg, some 1/2 inch ODx3/8 inch ID food grade vinyl tubing long enough to reach from whatever you set your cooler on to the bottom of your kettle PLUS 6 inches, an inline nylon valve, and a length of water supply line with a stainless steel braid for a jacket, and 3 hose clamps. The length of the water supply line doesn't really matter. I use one that's long enough to run the length of the cooler, but my experiments have shown that shorter ones seem to work as well. Feel free to substitute parts if you'd like something a little snazzier. The only really crucial piece of the whole setup is the stainless hose braid, so if you want to put a fancy ball valve or something else on your mashtun, go for it!
NOTE: The minikeg bung fits snugly into the hole left from removing the drain in most of the 48-54 qt. coolers I've checked. If the fit is loose, or you're worried about leakage, apply some food grade silicone sealant on the flange before inserting the bung into the cooler. Be creative!

Extract Brewing Tips For Making Great Home Brew
The easiest way to get started with homebrewing beer is usually by doing malt extract brewing. Home brewing using malt extract shortens the brewing process. In the context of beer brewing, mashing is the procedure of heating up malted barley or various other brewing grains to a specific temperature. The malted barley grains are next kept at a certain heat range for a fixed time period in order to cause the enzymes in the malted grains to break down the starches in the grains into sugars. The kind of sugar produced is usually maltose. It is this sugar that eventually yeast will consume and transform into alcohol and co2, creating beer.
Once mashing is completed, the homebrewer is left with mash. Creating mash can be fairly complex due to the large amounts of very hot water involved, and the elaborate process of straining and draining out the sugary liquid from the used grains. This type of brewing is referred to as all grain brewing. I recommend that people don't begin with all grain brewing and instead first become comfortable with malt extract brewing. Malt extract brewing eliminates the need to produce a mash. Commercial maltsters produce mash and through evaporation reduce it down to a powder or thick syrup. Home brewers can buy this concentrated malt extract and work with it to make their own beer without having to undergo the sophisticated and cumbersome process of making a mash.
Most homebrew batch sizes are five gallons, so if you are producing a mash, you will need a stockpot at least that size along with other equipment required to drain and sparge all of the grains. All-grain homebrewers also need to maneuver around these significant volumes of liquid and grains, which can weigh more than 60 pounds and be quite hazardous due to the boiling temps. Extract brewing, on the other hand, is much less complicated. There is no need for such large pots and quantities of boiling liquid since you are not making a mash. For a 5 gallon batch of beer you will only need to boil roughly 2 gallons of water with the malt extract, which will make things a lot easier.
Hops are added at various intervals throughout the sixty minute boil to add flavor and smell to offset the sweet taste of the malt. The longer hops are boiled, the more bitter your beer will be.. These kinds of hops are referred to as bittering hops. Hops that are added near the end of the boil are identified as aroma hops as little bitterness is produced, but the hop smell is. For some beers like holiday or other such spicy beers, spices and herbs are included near the end of the boil .
When your boil is done, you have what is referred to as wort. The end result is the same whether you brewed all-grain or if you brewed with malt extract. This very hot liquid now must be cooled down to 70 degrees or colder as rapidly as possible. The hard work is done, now it's time to allow the yeast to do it's thing. After the wort is cooled you add the yeast and wait for fermentation, which should get started within twelve hours. Depending on the beer style, inside of two weeks you will have a completed beer ready for kegging or bottling. Malt extract brewing is a wonderful way to get rolling with brewing beer at home, and you can unquestionably make some great beer with this method and become a great homebrewer!

A log stemmed thermometer with calibration up to 220 degrees F.
A small nylon net of the kind used to clean fish tanks. These are available from most pet stores and hobby shops.
And finally you will need a strong cleaner to regularly sanitize your all grain home brewing equipment.
This is all you will need to start out with. Do not get confused by the specifications for advanced home brewing equipment which looks similar but may contain items that you do not need to complete you initial all grain home brewing equipment set up.
When looking at recipes to use with your all grain home brewing equipment, always keep in mind that most all grain brewers make beer in batches of five to six gallons. You will need to modify the quantities to suit the capacity of your three gallon all grain home brewing equipment limitations.
